Peanut butter cookie and white chocolate strawberry protein bars. I feel like that’s all I have to say, but I’ll go on. Store-bought protein bars can get really expensive and many include preservatives, additives, and other ingredient extras that can be avoided if you make them at home! These are so yummy, you get 14-16 bars per batch, and two flavors keep them from getting old.
I love using real food ingredients to make staples at home, especially with convenience foods like bars! I, like so many of us, am trying to eat enough protein each day, and having these bars on hand makes that easier, healthier, and more holistic :) Enjoy!
Protein Bars
Total time: 10 minutes + 1 hour for chilling/setting
Makes 14-16 bars
Ingredients
2 ½ c almond flour
½ c vanilla protein powder (linked my fav, my discount code is nourishedwhole)
½ tsp salt
1 c natural peanut butter
2 tsp vanilla extract
3 tbsp coconut oil, melted
Toppings
Semi-sweet chocolate chips
White chocolate + freeze dried strawberries
Instructions
1. Line two bread pans with parchment paper.
2. In a large bowl, whisk the almond flour, protein powder, and salt until completely combined. Add the peanut butter, vanilla, and coconut oil. Mix until a dough-like base is formed.
3. Split the dough in half and press into the bread pans. Sprinkle the semi-sweet chocolate chips on one of the two bar bases, then the white chocolate chips and freeze-dried strawberries onto the other. Use the flat side of a glass or measuring cup to flatten the top to one even layer.
4. Cover the bread pans with plastic wrap and set in the fridge to chill for 1 hour before cutting. Store for up to 2 weeks.
