This is THE summer to take your holistic health seriously. And as you’ll hear me say (repeatedly), true health starts with a whole food diet. Which does not have to be hard! This recipe takes 20 minutes of active time, it’s high protein, packed with nutrients, and it’s sooo good.
The star of the show is the pineapple avocado salsa. It’s so bright and flavorful and adds SO much to the meal even though it’s so easy. The chicken is juicy and flavorful with the easiest marinade. Pro-tips for avoiding dry chicken: use a meat thermometer and take it off the grill at exactly 165F, and don’t skip rest time! Chicken needs a few minutes to rest before you cut it or all the juices will leak onto your cutting board instead of moistening your chicken.

Easy Chicken Tacos with Pineapple Avocado Salsa
Total time: 20 minutes + 20 minutes marinating time
Serves 4
Ingredients
For the chicken
4 large chicken breasts
2 ½ tbsp taco seasoning
1 lime, juiced
1 tbsp apple cider vinegar
1 tbsp olive oil
For the salsa
2 c pineapple, diced
1 avocado, skin removed, diced
1/3 c red onion, diced
1 jalapeno, seeds and membranes removed, diced
¼ c cilantro, chopped
1 lime, juiced

Instructions
1. In a bowl or Ziplock bag, add the chicken breasts, taco seasoning, lime juice, apple cider vinegar, and olive oil. Massage the marinade into the chicken to tenderize/help with absorption. Set aside to marinate for at least 20 minutes, or overnight.
2. Preheat the grill to 450F (you could also use a cast iron skillet if you don’t want to grill).
3. Prep the salsa by chopping everything and combining in a bowl. Juice the lime over the top and mix it all together.
4. Grill the chicken for about 5-6 minutes each side, or until the internal temperature reaches 165F. Set aside to rest for 5-10 minutes before cutting to prevent dryness. Chop the chicken into small pieces.
5. Assemble the tacos by adding chicken and salsa to warm tortillas. Enjoy!
