I feel like everyone has a banana muffin recipe that they know and love but I’ve got to break it to you, this one’s better. these banana oat muffins are our household favorite. they’re a healthier muffin recipe made with no refined sugar, extra fiber, and added protein. I love to meal prep them for quick and easy pre-workout fuel, breakfasts, and snacks. they’re moist, fluffy, chocolatey, cinnamony, and actually filling because they’re not just sugar and flour. so many muffin recipes are just sugary cupcakes in disguise, but these are actually healthy and so yummy.
Banana Oat Muffins
Makes 12-15 muffins
Total time: 30 minutes
Ingredients
Dry:
1 1/2 c flour
1 c oats
1 tbsp ground flax
1 tsp baking soda
1 tsp baking powder
1/2 tsp cinnamon
1/4 tsp nutmeg
Pinch of salt
3/4 c semi-sweet chocolate chips (for a refined sugar free option try Hu Kitchen)
Wet:
3 ripe bananas
1/2 c Greek yogurt (optional for added protein)
3 tbsp honey
2 tsp vanilla
1 egg
1/3 c coconut oil, melted
Instructions
1. Preheat oven to 350. Line a muffin pan with paper liners, then lightly spray with oil.
2. In a medium/large mixing bowl, mash bananas and combine all wet ingredients.
3. In a medium mixing bowl, combine all dry ingredients besides the chocolate chips.
4. Slowly add the dry ingredients to the wet while whisking. When combined, fold in the chocolate chips.
5. Scoop batter into the muffin pans.
6. Bake for 18-20 mins. Cool for 10-15 mins. Enjoy!
